Sweet Chilli & Garlic Vietnamese Salad

2 cups of assorted greens - lettuce, finely shredded cabbage, mesculin work well together
1 cup of torn coriander, fresh mint and vietnamese mint if you can get some
100g vermicelli noodles cooked according to packet directions, drained and cooled
1/4 cup crispy shallots
1/4 cup roasted peanuts, roughly chopped
1/2 cup cooked shredded chicken, pork or prawns
1/4 cup Sweet Chilli & Garlic Sauce
1 tablespoon lime juice
1 tsp fish sauce or 1/4 tsp salt


Toss the vegetables, herbs, chicken and noodles together in a bowl.
Mix the dressing and drizzle over (you may want to adjust the sweet, acid & salt balance slightly to your tastebuds)
Top with crispy shallots & peanuts
Pack into your to-go container with a fork and enjoy the most delicious salad lunch with a great view!
