Slow Cooked Beef Cheeks with Onion Balsamic Marmalata

 

4 beef cheeks trimmed of all sinews
3 Tablespoons of flour seasoned with salt & pepper
olive or vegetable oil 
2 stalks celery, diced
1 carrot, finely diced about 
3 cloves of garlic, crushed
1 onion, finely diced
1 dried bay leaf
2 cups beef stock
1 jar of Onion Balsamic Marmalata
Preheat your oven to 160C
Dust the beef cheeks with the seasoned flour and shake off any excess
Add a generous dash of oil to your pan and cook the beef cheeks on medium heat. Set aside while you add another dash of oil and cook the onion, carrot & celery and cook over low heat until softened. Add the garlic, bay leaf, beef stock and the cheeks back into the casserole and bring to a simmer. Finally add the jar of Onion Balsamic Marmalata, cover the casserole and put in the oven. Bake for 3 - 3 1/2 hours until the cheeks are starting to fall apart. 
Serve with mashed potatoes or creamy polenta. Garnish if desired with micro greens or chopped parsley. Enjoy!
